iTWIN80 double arm mixer

The double arm action (kneading, lifting, stretching and folding) ensures perfect gluten development and maximum water absorption without heating the dough. The goal of a good dough is to be able to form a resistant and extensible gluten mesh, while managing, at the same time, to oxygenate our dough well. The special movement, with its particular way of soliciting the mass, is the best for incorporating air and oxygenating the dough as much as possible, allowing for rapid leavening and a greater volume of finished products, in the shortest possible time. The result of these multiple steps, therefore, will be a light and well-leavened product. Keeping the characteristics of the machines unchanged, the ITALMIX machines offer the possibility of mixing different types of product, with different consistencies and percentages of hydration. Designed to work both soft dough (maximum 90% hydration) and medium-hard dough (minimum 50% hydration), with Italmix you can finally find a machine that works with you, and for you. Instinctively simple, exceptionally performing. Our mixers are equipped with all the necessary systems to ensure maximum safety for any operator, without slowing down or complicating their work. The presence of safety microswitches positioned in strategic points ensures the start of the work cycle only in conditions of maximum safety. The machine is equipped with an immediate stop system, when the guard opens, or if the emergency button is pressed thanks to an electric motor brake.
MAN model (three-phase): Manual electromechanical panel with two coupled bowl and tool speeds, and switch from first to second speed (40/60 strokes). No timers.
INV model: Automatic digital panel equipped with a graduated knob that operates the inverter potentiometer and speed display. The operator has the possibility to vary the strokes of the machine from a minimum of 25 strokes per minute to a maximum of 75 strokes per minute at any time. An electronic timer has the function of stopping the machine after the estimated time.
INV/PROG models: Programmable automatic digital panel with which it is possible to set an automatic cycle, selecting up to 5 different speed values and work times. We can save up to 99 different recipes. The machine will work automatically for the recipe time and will stop at the end of the cycle. Thanks to a graduated knob that activates the inverter potentiometer, the operator has the possibility to vary the strokes of the machine from a minimum of 25 strokes per minute to a maximum of 75 strokes per minute at any time. Once you have completed the operation, you can easily extract the dough with the use of an "impulse" button which causes the bowl to rotate in jerks. The machine has a "MANUAL" function which is useful for creating new recipes.
TOUCH models: Automatic touch screen panel and Mitsubishi PLC, thanks to which we can memorize infinite recipes. The operator can set various parameters for each recipe, such as the number of kneading phases, speeds, times and pauses necessary for adding ingredients or letting the dough rest. The speeds can be set from a minimum of 25 beats per minute to a maximum of 75 beats per minute, and changed at any time. The machine has a "MANUAL" function which is useful for creating new recipes. Once you have completed the operation, you can easily extract the dough with the use of an "impulse" button which causes the bowl to rotate in jerks. Designed in compliance with INDUSTRY 4.0 technological standards.
