Sofia is a machine with a centrifugal mixing tank that allows a static, homogeneous and faster hydration of the dough. This patented system allows the extrusion of all types of flour and mixtures. Sofia is equipped with a safety system, thanks to an advanced electronic card, automatically reversing the rotation for 15 seconds and stopping the machine in case of an inconsistent dough. This system can avoid damaging the machine.
